Kombucha Tea is a very ancient Folk Drink. Simply fermented sugar and tea. Originally relying on natural airborne yeast and bacteria, creating a low alcohol (less than 1%), semi-sweet, semi-sour, slightly carbonated, health beverage.
Similar to "Lambic Beer", with 2 major differences. Kombucha is brewed aerobically (open to the air) and simultaneously with the Acetobacter species of bacteria. This species converts the alcohol made by the yeasts into the beneficial acids that makes Kombucha Tea so wonderfully tasteful and healthy.
