Over 20+ years experience in Kombucha Tea, Kombucha Beer,   non-alcohol Jun, Kvass, Ginger Beer, Lacto-soda's. Now including Cold Brew Coffee and Nitro Coffee can be added to your menu. 

Presenting below, but not limited to, is our Kombucha Symbiosis Fermenter which we custom design specifically for you. There is typically a 1-2 week delievery time frame. 

Our Kombucha Symbiosis Fermenter starts with a 15 gallon fermenter that will grow and expand to fit your production. 

The distinct advantage is the surface area to depth ratio. The greater surface area provides greater oxygen and nitrogen to the bacteria and to the yeasts. This creates a healthy and vibrant SCOBY population.  With greater access to oxygen the bacteria convert the alcohol, created by the yeasts, to acetic acid faster, and more completely. The bacteria utilize the glucose to produce high amounts of gluconic acid, the result is less alcohol and a better ratio of gluconic acid to acetic acid for a less sharp (less vinegary) smooth and flavorful kombucha tea. Faster ferment. Lower Alcohol. Less Sugar.  More options. 

This versatile system allows for multiple ferments of different flavored kombucha, Ginger Beer, Jun, Kvass, Cold Brew Coffee you name it Besides numerous different types of ferments, you may also vary the fermentation cycle as needed. For example having one batch finishing on a Monday, another on a Tuesday and son on.

 Kombucha Symbiosis Fermenter

Every good - no great Kombucha begins with its water. Check with your local water department to get a list of whats in it and when they do any flushing. Then Google << how to adjust your water for brewing >> 

Boil the water, sugar and tea, herbs & spices.  Set up an account and receive 30% off.       Most local food inspectors, and for health reasons require the ingredients to be boiled. Our DigiBoil heats the water to your desired temperature and maintains that temperature. available in 110 or 220 V, 9 to 17 gallons.  Avoid having tp filter or dreadful pieces floating about with our large size Mesh Bag

Buy individually or collectively our Kombucha Symbiosis Fermenter are made from 22 gauge, 300 series stainless steel and holds a maximum of 15 gallons each.  We recommend a 12 gallon brew. Fitted with a weldles stainless steel ball valve. This allows for fast and easy upscale and expansion as your busies grows.

Once your ferment is complete  Keg it. Kegs are easier to move about, to store, to carbonate, and to disperse from. They afford the most value. 

When you're first starting out having a full size cold room is pricy. A good old refrigerator works extremely well. A standard 20 cubic inch can handle 12 kegs and an assortment of mini-kegs and growlers 

Until you pasteurize, or chemically stabilize your ferment, it will continue to ferment and when bottled, canned or kegged will produce more alcohol.  Alcohol and carbonation are equally produced. The more natural carbonation the more alcohol. Refrigeration has 2 main effects.

1. it slows or inhibits future fermentation. Alcohol level stays low.

2.   "Chill Proofing" and  "Cold Stabilization" helps settle out particles, and smoothes out the harshness. The taste and character are improved and remain more constant to sales. 

We recommend that you keg and chill (<36F) before forced carbonation. This will save you both time & money. Forced carbonation will deliver a consistent and  known amount of carbonation that you determine best suits your customers. The smallest  CO2  system, complete with clamps, lines, hoses, and tank that we recommend is a 5 pound tank. A single 5 pound tank will fill about 15-22 5 gallon kegs. That would dispense over 800  12 oz glasses. Even when you outgrow this system everything here will still come in useful.
