Waiting for water to boil and keeping the typical home water heater at a constant temperature is expensive and time consuming.
Depending upon volume one is fermenting a common trick is to only heat up 1/2 of the projected volume , mix the sugar and tea, and then to cool down with cold water from the (filtered) faucet. . A few kombucha brewers are using the typical On-Demand water heaters which are less expensive than a brewery's Hot Liquor Tank (HLT) , HOWEVER many food inspectors and state regulations require the tea to be in Boiling Water and where the On-Demand Tanks only go to about 160F . All 3 of the DigiBoils featured here with bring water to boiling and maintain that temperature as dictated by you.
The DigiBoil is a versatile electric kettle that can go to a precise temperatures and maintain that temperature.
two built-in heating elements that run off a 110V plug. One element is 1000w and the other is 500w for a combined 1500 watts! The elements can be individually controlled, allowing you to use a single element to gently hold temperatures, or engage both elements to quickly go from steeping temp to boiling. Temperatures are set and automatically maintained through the digital control panel. Simply set your desired temperature and flip on the heating element(s). Typically takes 45 minutes to boil 9 gallons
Integrated stainless ball valve comes with a 13mm barb (approx. 1/2"). The barb can be removed to attach 1/2" FPT fittings if desired.

One element is 1900w and the other is 500w for a combined 2400 watts!. With NEMA 6-30R plug (5 ft. cord) about 25 minute heat up time. but depends upon ambient temperatures.
