Lactic Acid Bacteria and Your Brew
Water kefir grains contain a living community of lactic acid bacteria (LAB), principally Lactobacillus. The LAB convert sugars into lactic acid, contributing to the drink’s pleasantly tart flavor. Acetic acid may also develop during fermentation, and a little carbonation and a little alcohol
Fruits and juices contribute their own character and may introduce acids such as citric and malic acids. Your choice of ingredients, together with fermentation time and temperature, helps make each recipe your own.
Our Ginger Beer PLANT VS Yeast-Based Ginger Beer BUG
Our Ginger Beer Plant starts with an established LAB-based culture, working alongside naturally present yeasts. This differs from ginger beer recipes that begin by adding baker’s or brewer’s yeast. (Ginger Beer BUG)
Those yeast-based recipes emphasize alcohol and carbonation production. Our starter emphasizes lactic acid fermentation, while also developing carbonation and some alcohol.
With our culture, ginger beer is another recipe you can explore using the same starter you order here.
More Fizz Means More Fermentation
When yeast ferments sugar, it produces both carbonation and alcohol together. Some carbonation escapes into the air, while the alcohol largely stays in the drink. Fizz is a useful clue that fermentation is happening, but some of that fizz may already have escaped. The longer the ferment, typically over 14 days, produces greater amounts of alcohol over 1% ABV.
Adding sugar, fruit, or juice “for extra fizz” will also increase alcohol when yeast ferments those sugars. In a tightly capped bottle, carbonation is trapped while fermentation continues, producing more fizz and more alcohol.
For the home brewer, remember: bottling with extra sugar feeds fermentation—not just bubbles. Use bottles designed for carbonation and follow safe-bottling instructions to avoid excessive pressure.
A mini keg provides another way to carbonate your finished drink. Adding carbonation from an external CO₂ source does not itself produce alcohol or remove alcohol already present.
Alcohol awareness: Fermentation time, temperature, ingredients, and culture activity affect alcohol production. These drinks should not be assumed alcohol-free. Avoid alcohol during pregnancy, do not serve home ferments with unknown alcohol content to young children, and consider alcohol content before driving.

Brewing Help and Support
A mesh tea ball makes retrieving your grains easier and helps keep them from washing down the drain.
A Free Water Kefir eBook is also available to help you get started.
A simple home test to see if your Water Kefir is alive is to fill completely a 6 or 8 oz plastic water bottle, leave very little if any airspace. Shake well and leave at room temperature (>74F) for 1-3 days. The bottle should become hard. When opened fizziness will appear, and in some cases the carbonation (CO2) explosive as the carbonation escapes. To save the CO2 leave the unopened bottle in the refrigerator for a few hours before drinking.
