What is kefiran ? Kefiran is the flat translucent sheet or biofilm that connects Kefir Grains. It is formed from the flora (lactic acid bacteria and yeasts) of kefir grains and glucose units, in almost the same proportion. Kefiran has a prebiotic nature agitating the growth of probiotics in the gastrointestinal tract. It extends specific therapeutic benefits by balancing the microbiota in our gut.

While most Kefir Grains contain Kefiran - Exopolysaccharides -the very beneficial sticky stuff whereby the Grains stretch out and grow. our flat sheet Kefiran is clearly visible and developed  and offers significantly more Exopolysaccharides than the simple grain itself.

Kefiran Simple Start

Follow this recipe for the first ferment to ensure a healthy start.

you'll need: 16 ounce glass jar, cloth or paper cover, rubber band to secure, 12 ounce fresh Whole Milk (avoid Ultra Pasteurized) a warm spot to ferment. Ideal temperature is 76.6F. Kefiran will ferment at lower temperatures but slower 

1. Open the package and pour into a glass of milk.

2. Stir gently. Do not stir during the fermenting stage

3. Cover with a cloth and secure with a rubber band

The typical signs of Kefir being ready to drink

1. when you tilt the glass the kefir sticks more to the sides than milk (this is the primary sign of a ready to drink kefir)

2. The glass of kefir feels heavier than when it was milk

3. The smell would be on the pleasant side - different than the aroma of milk. May be "yeasty" to some folks 

4.  The taste would be Bland to slightly Sour

5. Kefir would be thicker than milk, but kefir is still very pourable and drinkable. Becomes thinner the more you stir.  

6. Not rancid (as regular Whole Milk) would be.

Other signs of an active ferment is the milk separates into Curds & Whey, has a stronger smell and cheesy or yeasty character.  This is normal and expected to the fermentation process. as Kefir is turning the milk, first to kefir, then to Curds (clumps forming typically on the top) then to Curds & Whey (clear liquid typically forming on the bottom), to more Whey and less Curds, and to Cheese and Whey. All phases are healthy and edible. Our Kefir will match your personality and its ready when you choose. Some folks like it early, typically around 24 hours, some with a stronger character at 30 or 36 hours.  3)   Remove the Kefir Grains. 

     Stir and Strain the kefir to separate the Kefir from the Kefir Grains.  Always Retrieve the Grains. Start another ferment.

note: the most difficult part of making kefir is retrieving all the grains. Although our Kefir Grains loves freedom and to roam, getting them back for another ferment is easier and more convenient with a Tea Ball, strainer, or cheese cloth bag. Easy just place the grains in the tea ball, place the tea ball in the fresh milk, dunk a few times, cover and ferment. When ready just remove the tea ball and place in a waiting new cup of milk, dunk a few times and ferment. Our 1 1/2 + 2 inch tea balls can hold enough grains for 3-4 cups of milk. We also have larger tea balls and tea bags available.

We offer a variety of Quality Strainers & Filters;  Stainless Steel Filters, Cloth Filter; Muslin, Cotton, Mesh as well as cheesecloth      

You can use any kitchen strainer depending upon the size of the holes.  The kefir does not stay in contact long enough for any adverse reaction. Stirring helps speed the process. Kefir GRAINS are tough and rubbery, and bounce back under pressure. Curds will disappear under slight pressure or upon stirring. Do not rinse with water. If need be rinse with fresh milk (or your choice) and then recycle back into the new ferment. There is no need to remove all the curds from the grains, and the curds will help the new feremnt along a bit faster.
