What are the differences in these bacteria ferments?
One noticeable difference is the shape.
Real Ginger Beer Plant is flat and grows on the surface across the top.
Water Kefir, Japanese Water Crystals, Tibicos, California Bees … or hundreds of other regional names produce small pea sized crystals that float up and down in a water ferment.
What is similar is the Lactobacillus bacteria that ferments the sugar and various fruits, roots, juices, herbs and more into a beneficial slightly carbonated refreshing drink.
