Within the Kombucha Mushroom the pro-biotic bacteria and yeasts live on their own level separated by layers of mucopolysaccharides construction. You can actually see their strata on the sides of the mushroom. Like a mini hi-rise of floors which the different bacteria and yeast live. The mushroom is not a side effect of the kombucha tea ferment, it is the purpose of the ferment. The Kombucha mushrooms itself is where the beneficial bacteria congregate. Alcohol Extracted Kombucha (or alcohol added) is not identical to kombucha tea. Yet remarkable affects have been claimed. Alcohol extraction contributes to Polysaccharides, which are not water soluble, and are considerably healthy. This only applies to extracting the mushrooms themselves, and not simply adding some alcohol to the pressed extract. We soak our mushrooms in organic grape alcohol (from the Santa Cruz Mountains) a full 60 days to achieve this effect.
Alcohol should be less than 15% by volume. A 20% alcohol (by volume) solution will kill the probiotic yeasts and bacteria. (preventing further fermentation) and eliminating any potential probiotic effects. The advantage are in preventing possible cross contamination (minor risk), preventing squidles and those unsightly globs from forming (major distraction and nuisance, but healthy stuff really) and the addition of polysaccharides. To use vodka, gin or whiskey, the percentage of alcohol is expressed as proof. Divide the proof by 1/2 to find the percent alcohol. Therefore 80 Proof vodka = 40% alcohol by volume.
