Shu Mee despite being on the low end of premium white teas Shu Mee has the finer properties attributed to white teas. Shu Mee is picked late April, May and June. The tea is somewhat mixed flat and some twigs. Leaves are the second and third. Our Shu Mee has a more pronounced taste profile - almost oolong tea-like. Many white tea drinkers prefer more "substance" to the taste compared to the delicate nuances of other white teas and our Shu Mee delievers a mellow slightly nut taste. Interesting the western cosmetic industry is beginning to use white tea extract to be worn underneath moisturizers. Reason, white tea has been shown to be more effective in mopping up free radicals that cause skin to sag.

A home decaffeinate water-process: Immerse the tea in one cup of boiling water. Wait 30 seconds and remove the tea. Discard that water. Now use the tea in your regular water. 80% of caffeine is naturally extracted in hot water within the first 30 seconds.
